When it comes to French oak barrels Elevage provides a choice of oak intensity to suit your style and maturation programs. By adding the oak to the wine, we are able to adjust the intensity from vintage to vintage, optimise the weight and surface area to suit the maturation cycle, using all of the oak without any wastage. Elevage’s range of top-grade barrel oak is able to expose all the wine to all the new oak all the time. This enhances the oak ‘magic’ of greater complexity, palate weight and super fine tannins, amplifying wine length and texture.
Barrel grade is not the same as commercial grade oak. In coffee terms think Arabica versus Robusta: both ostensibly derived from the same plant, look similar, but are very different in sensory characters and ultimate quality. The best coffees are always Arabica. The same applies to oak: there is oak and there is barrel grade oak. A number of key qualities are required to elevate oak to barrel grade: Forest selection, hand splitting, seasoning, and toasting.
